Tasty Pleasures: Not your average vanilla

I’ve been making some modifications to my eating habits not just to lose, but to maintain a lighter weight. One thing I’ve learned during the process is that I always end up binging on junk food when I deny my cravings. So, I’ve revised my approach by not denying my sweet tooth but satisfying it in a health-conscious way. By health-conscious, I mean being aware of the ingredients in my food and not going over-board with those ingredients or proportions.

While I know ice cream will never be a healthy dessert, I’ve found that a serving (or two, hehe) of Halo ice cream allows me to indulge without over-indulging.

Because Halo ice cream is low calorie and low on sugar, I find that I can eat a modest dessert while amplifying the toppings.

This past Sunday, I had a delicious, satisfying bowl of vanilla ice cream with a cinnamon-sugar almond topping for dessert. If you’re interested in trying it yourself, here’s the recipe for one serving:

Ingredients:

Halo ice cream (I used vanilla bean)

1/4 cup of almonds (I used unsalted and unroasted)

1 tbsp. of cinnamon

1 tsp. of sugar (I used one sugar cube)

1/2 tsp. of vanilla extract

1/2 tbsp. of butter

Directions:

  1. Mix vanilla extract, sugar, and cinnamon in a bowl.
  2. Heat mixture above with butter on low heat.

3. Crush almonds. Then, mix crushed almonds with mixture on pan. Turn up the stove to medium heat.

4. Keep everything cooking on the pan until you see the almonds start clumping together and the mixture getting a bit sticky.

5. Turn stove off and top ice cream immediately!

Note: If you want the almonds to be crunchy and not waxy, use pre-roasted ones, or roast them yourself before adding it to the cinnamon-sugar-vanilla-butter mixture.
